In 2023, I leaned further into oxidative ageing, deliberately chasing flor development, as in a fino sherry. One barrel did exactly what I'd hoped. In the other, the flor — or florette, a thinner yeast layer than true flor — broke. I set that single 225-litre barrique aside and aged it as a standard wine, topping it up regularly from then on.

Forty (40) months later, the tannins had resolved, and the wine had taken on real richness and the savoury complexity I'd been chasing all along. The result sits somewhere between a rosé and a light red: a completely singular wine, with a yeasty, savoury undertone and the chalky acidity you find in vintage Champagne.
